Egg Yolk Pastries Explode When Microwaved 蛋黃酥放微波爐加熱  瞬間炸開內餡噴濺

Presenter:Many people will be eating mooncakes and egg yolk pastries during the upcoming Mid-Autumn Festival long weekend. The New Taipei City Fire Department reminds the public that microwaving these pastries could cause them to explode.


The Mid-Autumn Festival is almost here, and people are looking forward to eating mooncakes and egg yolk pastries. Some people microwave pastries because they like eating them hot, but they might not be expecting this to occur.

An explosion is heard after just a few seconds, and it looks like the pastry has exploded, spraying the filling everywhere.

Mr. Lin, Resident:" You think, how can something that is edible explode like that? "

Why do egg yolk pastries explode when microwaved? The New Taipei City Fire Department has a scientific explanation.

Tseng Wei-tung, Officer, Fire Safety Promotion Div., New Taipei City FD:”Egg yolks have a membrane around them, and there is moisture inside the membrane. When the moisture is heated, it vaporizes. The water becomes vapor, and the bulk will expand up by about 1,700 times. During this process, the pressure that is inside the membrane has no way to dissipate, so it just finds a place to explode out. “

If you really want hot egg yolk pastries, there is something else you can do. The fire department says people should first slice the pastry into parts or poke some holes on the top before microwaving it or putting it in the oven.

 

 

再過幾天就是中秋節,月餅、蛋黃酥等傳統糕點,好吃又應景,不過,想要吃上熱騰騰的月餅,有民眾會放進微波爐加熱,但如果微波的是蛋黃酥,可能看到這個畫面。不到幾秒鐘,碰的一聲,蛋黃酥宛如發生大爆炸,內餡噴得到處都是,威力不容小覷,民眾知道後,也嚇了一跳。

民眾 林先生:「就覺得怎麼會吃進去的東西,是會爆炸的這樣。」

滿心期待香味撲鼻的蛋黃酥,最後卻變成蛋黃渣,為什麼蛋黃酥,微波加熱會爆炸?到底怎麼了?新北消防局揭開背後原理。

新北消防局消防宣導科科員 曾暐桐:「就是蛋黃有膜,然後那個膜裡面有水分,那水分同時被因為被加熱的關係,它就是變成氣化的狀態。它的水變水蒸氣,體積會膨脹大概一千七百倍,所以如果在這個過程它在膨脹的過程,那個壓力膜裡面的壓力沒有辦法宣洩,所以它會直接找一個地方直接炸開。」

蛋黃酥加熱有撇步,新北消防局表示,建議拿刀切開,或在上面戳洞後,再放進微波爐,也可以直接用烤箱加熱,才不會沒有吃上糕點,打壞興致,還要收拾殘局。
