French astronaunts enjoy Michelin-starred dishes in space / 法研發無重力美食 太空人嚐米其林家鄉味

In other news, we know that the French have always been known for their cuisine, and now the country is about to extend the luxury of gourmet food to its astronauts in space. French chefs are preparing special meals to help those working on the International Space Station feel more at home. The dishes produced in the station's kitchen are far from mysterious liquids in test tubes - they include everything from lobster and quinoa to confit de canard. French astronaut Thomas Pesquet arrived at the International Space Station on November 17, 2016, for his six-month mission. Before his journey ends, he will often have frozen dried food that provides all nutritional needs. Desserts are working well especially the molten chocolate cake that is ordered almost every time. Then you have some festive dishes with scallops or lobster that are in demand because they (astronauts) want to enjoy an exceptional meal in space. Since 2004, Michelin-starred French Chef Alain Ducasse and his team have collaborated with the French National Space Agency on the Space Food project. So far, they have invented 30 dishes that are allowed in spacecraft. During the process to make tasty food, Ducasse's chefs need to take strict space conditions into consideration. To avoid diseases, the food cannot be contaminated by bacteria. Moreover, the food should be free of crumbs and contain the least amount of liquid possible, so that machines on the ISS will not suffer incrustation. ==JEROME LACRESSONNIERE chef for Ducasse Conseil== Naturally, chefs are aiming to cook a scallop so it is juicy, to cook vegetables so they are crunchy, but we must take into consideration all scientific aspects of space and cook for the maximum of time so that residual humidity is very low and that there are no crumbs. In addition to that, the chefs have to bear in mind that the sense of taste is not the same as it is on Earth because of weightlessness. ==CORRINE DUBEl, nutritionist== Due to the state of weightlessness, olfactory molecules don't arrive anymore to the mucosa of the nose in the same way (as on Earth) so there is a major loss or even a complete loss of flavor; that should be taken in consideration so plates are more spiced, more spice up there. Although some traditional French dishes, such as foie gras, cannot be sent to the ISS, Pesquet is still able to enjoy 13 different dishes "out of this world" during his mission for celebrations.
