Despite recent economic downturns, Taiwan's culinary industry is expected to hit a new high of NT$430 billion in revenue this year. In order to prepare students for the workplace early on, a senior chef, Huang Ming-po, is invited to teach fruit carving in Chih-Kwang Senior Vocational Business and Technology High School in New Taipei City. Let's take a look how Huang and his students transform furits and vegetables into beautiful plate decorations. Students majoring in food and beverage are listening attentively to the teacher. Fruit carving is a mandatory course for the students at the Chih-Kwang Senior Vocational Business and Technology High School. The school invited a celebrated hotel chef as a lecturer to teach cooking skills and the art of plating. ==HUANG MING-PO, Hotel Executive Chef== As a cook, if you know how to decorate the dishes to enhance the aesthetic appeal, it will be advantageous for you. Students start practicing by using easy-to-carve fruit. They keep the fruit's original shape, and cut a simple design into it. After building up confidence, the students move forward to a more challenging task. ==LIN I-CHING, CKVS teacher== We teach beginners to slice apples or kiwis and to arrange their slices in rose shapes. We also practice hollowing out oranges to make orange cups. ==HSU FANG-CHI, CKVS student== I was concentrated so hard on fruit carving that I hardly noticed the time pass. It was a little bit difficult, but I was satisfied with my work. Focusing on their work, the students hold their knives tight to carve pumpkin faces during a two-hour lesson. They were all smiles when taking pictures of their completed work. The teacher said they have improved a lot since the beginning of the course and they have all learned to protect themselves from being cut. ==LIU YEN-TSO, CKVS student== The most difficult part is in the details. You may cut your hands, so you have to be very careful. ==CHEN PO-HSUAN, CKVS student== Fruit carving is difficult. It takes time to practice and learn. Besides fruit carving, the teacher also teaches salt carving to decorate the food. As the culinary industry becomes more competitive and focuses more on creativity and details, the teacher said that having diverse skills will help students to distinguish themselves from others. ==HUANG MING-PO, Hotel Executive Chef== Nowadays, students with diverse skills and multidisciplinary knowledge can better adapt to the workplace, as well as expand their career opportunities. Through fruit carving, the students give these ordinary fruits a new appearance. The course bridges the gap between education and the culinary industry to pave the way for food and beverage graduates to take up jobs.
